From Cape Clear Island Distillery in West Cork. Ireland’s only Island distillery, this gin uses local hand-harvested botanicals, from both land and seashore with water from its own well. This gin took over 6 months to develop, to bring out the authentic and fresh sensations of the Island to complement but not overpower the traditional juniper base.
Tasting Notes from the Producer
Aromas (without water) Alongside juniper, citrus, and spice, the use of kelp brings a gentle aroma of sea air and some delicate floral notes from the locally foraged fuchsia and honeysuckle.
Flavour Warming cassia, citrusy spice from coriander seeds, a peppery kick from cubeb, and subtly sweet citrus
